Parma Ham
Galloni Prosciutto di Parma is made from carefully selected Italian pork legs sourced exclusively from Italian farms within a fully controlled supply chain. The pork comes from heavy pigs, raised to a weight of between 160 and 180 kg—a defining characteristic that gives the meat the ideal balance of lean muscle and fat for long curing.
Each ham is still salted by hand by Galloni's Master Salters, who carefully adjust the amount of salt according to the individual characteristics of each pork leg. It is a craft passed down through generations, using only the salt that is needed and allowing time and slow curing to shape the ham's distinctive character.
When sliced, it is distinguished by its uniform rosy colour, firm white fat and a velvety texture. On the palate, it is delicate, naturally sweet and pleasantly lingering.
We recommend serving it with good bread, fresh seasonal figs or a piece of Parmigiano Reggiano.

The story

For more than sixty years, the Galloni family has been preserving a craft rooted long before the company was founded in 1960. To this day, each ham is still salted by hand, while the slow curing process relies on the natural air that flows through the hills at the foot of the Parma Apennines, a climate that makes this place uniquely suited to producing Prosciutto di Parma.
We chose Galloni because it represents a way of making food that understands the value of time. Innovation is used to refine every stage of production, never to speed it up. As a family-owned company, Galloni continues to favour traditional methods, carefully selected raw ingredients and an approach that puts flavour before volume.
