The pasta is made using carefully selected Italian durum wheat grown in the country's most suitable regions, then milled in-house by the family's fourth generation. The wheat is gently debranned to produce semolina with high hygienic standards, before being bronze-drawn to create a rough texture that perfectly holds sauces and delivers excellent cooking performance. Finally, the semolina is mixed with pure, low-sodium spring water sourced from the Matese Mountains, giving the pasta its distinctive quality and authentic character.
